Gretna Green Ltd has announced two senior leadership appointments as it embarks on the next stage of a multi-million-pound hotel redevelopment. Calum Milne has joined as Head of Hotels, and Sam Miller has been appointed as the new Head Chef at Smiths Hotel.
With over 35 years in the hospitality industry, Calum Milne brings a wealth of experience leading some of the UK’s top hotels, most recently Palé Hall in Wales. He has overseen the creation of a hotel group from scratch and guided several properties to win ‘Hotel of the Year’ awards. Now returning to Scotland, Calum is focused on transforming Smiths and Gretna Hall into standout 4-star destinations, supporting long-term growth for the business and the local community.
Sam Miller brings over 15 years of kitchen experience, having worked his way up through hotels and restaurants across the UK. Known for his calm leadership, team focus, and love for fresh, flavourful food, Sam is now heading up a new culinary direction at Smiths. Launching this summer, the new menu will feature 12 refined, seasonal dishes built on regional produce and designed to run across the restaurant, lounge, and room service.

Alongside the leadership changes, the transformation includes a refreshed wine list and longer-term plans to enhance leisure facilities such as spa and gym spaces – aimed at attracting extended-stay guests and raising the bar for Scottish hospitality.
